Ever finish your salad and your left with a bowl full of lettuce? I pick out the good stuff and eat around the lettuce, so skip it! Who says your salad needs lettuce!?
Since it’s hotter than Zac Efron in a Speedo outside, Patrick and I have been hooked on Hometeam BBQ’s tomato cucumber salad because it’s both refreshing and bursting with flavor.
Feeling ambitious, tonight I tried to *recreate* it, and tbh I got pretty damn close.
Follow these 7 steps to an easy side for any summer BBQ:
Step 1: Chop up grape tomato, red onion, cucumber and throw it in a medium bowl
Step 2: Add in feta and fresh basil
Step 3: Make the dressing by squeezing 1/2 lemon, generous pour of red wine vinegar, olive oil, pinch of salt & pepper
Step 4: If you’re feeling adventurous you can add in a pinch of sugar
Step 5: Pour dressing over and mix
Step 6: Refrigerate to let marinate for 2 hours….or as long as you can wait
Step 7: Pair with a protein and enjoy!
